Sun-Dried Tomato Pesto
1 (10 oz.) jar sun-dried tomatoes in olive oil
1 cup (packed) fresh basil
3 garlic cloves
2/3 cup freshly grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
Blend sun-dried tomatoes, their oil, basil and garlic in a food processor until the tomatoes are finely chopped. Transfer to a bowl and stir in cheese, salt and pepper.
